Pumpkin Cheesecake Smoothie

This recipe combines healthy ingredients with delicious flavors. (Yield: 2 servings)

Ingredients:

  • 2 c. water
  • 1 c. pumpkin puree
  • 2 medium carrots chopped
  • 1/2 c. raw cashews
  • 1/4 c. cooked quinoa
  • 2 - 3 Medjool dates
  • Large handful of ice cubes
  • 2 tsp. pumpkin pie spice
  • 1 scoop vanilla protein powder
  • Coconut cream or cashew cream for garnish (optional)

Cooking Instructions:

  1. Add all the ingredients in the order listed to a blender and blend on high until smooth and creamy.
  2. Pour into two glasses and enjoy!
  3. Optional: drizzle a bit of coconut cream or cashew cream on top and swirl it around
